SCOPE

Our Sushi Chef has a perfect approach and attitude, immaculate appearance and lives the European luxury on daily base. Further he/she shows willingness, flexibility, Straightforwardness and team spirit. He/She is aware of his role as internal host and lives the people oriented service. He/she sees excellent relationship with guests, team members, superiors and managers naturally. He/She sees him/herself as essential part of the whole and contributes his part to it accordingly. He/She is on daily base friendly, reliable and well organized. His/her ambition is to create out of innovative ideas new traditions. 

OVERALL OBJECTIVES

The job of Sushi Chef is executed satisfactorily when:
  • Dishes are prepared, cooked, immaculately presented and served according to the restaurant’s menu, hotels philosophy, high quality standards set by Kempinski and the Executive Chef.
  • Communications done politely and displays courtesy to guests and internal customers.
  • Effective employee working relationships are established and maintained.
  • Familiarity with property safety, first aid and fire and emergency procedures is demonstrated and equipment is operated safely and sensibly.
  • HACCP is implemented and practiced.


Key Responsibilities
MAIN RESPONSIBILITIES
  • Prepare in advance food, beverage, material and equipment needed for the service.
  • Cook and serve dishes according to the restaurant’s menu and set directions by the Executive Sous Chef and Executive Chef.
  • Support other kitchen posts where required
  • Preparation of mis en place for a la carte-, Room Service- and Bar menu.
  • Check, storage and processing of existing and newly delivered food items.
  • Support the Sous Chefs and Executive Chef with the food orders.
  • Provide direction to the Kitchen helpers, including Commis, Cooks, Kitchen Attendants and Stewards.
  • Clean and re-set their working area.  
  • Knowledge of products and awareness of related costs.
  • Daily surveillance and warranty of immaculately cleanliness and hygiene in entire kitchen area.
  • Wearing immaculate and clean Uniform according to corporate grooming standards.
  • Compliance of respective policies & procedures
  • Control condition of all technical and general work equipment
  • Participation on Culinary Team Meetings
  • Result oriented relationship with all Restaurant Outlets, Stewarding, Purchasing, Human Resources etc.
  • Compliance of work security
  • Commitment to personal and specialized further education in relevant areas 
  • Recycle where-ever possible and enforce cost saving measures to staff.
  • Communicate to their superior any difficulties, guest or internal customer comment on and other relevant information.

Additional responsibilities and tasks can be added at any time according to the needs of the business and of the hotel.

Skills, Knowledge and Expertise
NATIONALITY: Eligible for a working permit in country of hire

EDUCATION:
Gastronomic education certificate or equivalent (apprenticeship/diploma/BA/Bsc)  
Must show signs of career development
HACCP certification

EXPERIENCE: To fill the position, the following is required:
  • 6+ years kitchen experience
  • 3+ years in kitchen management role, preferably with an international 5* hotel chain
  • Experience in a standalone F&B operation is beneficial
  • International experience is preferred

LANGUAGE: Ability to work and communicate in a multinational environment:
  • Local language – excellent oral and written skills
  • English – excellent oral and written skills
  • Additional language - beneficial

COMPETENCIES:
  • Knowledgeable of food safety regulations
  • Thorough knowledge of Sushi different types.
  • Ability to work independently, thrive under pressure in challenging circumstances and come up with proactive, rational solutions
  • Excellent verbal communication skills
  • Ability to establish and retain effective working relationships with hotel staff and clients/vendors
  • Ability to identify and delegate tasks effectively
  • Excellent organizational and time management skills
  • Professional, confidential and ethical approach at all times
  • Working in a safe, prudent and organized manner

TECHNICAL COMPETENCIES: Computer literacy adapted to the field of culinary:
  • Ability to operate computer and office equipment
  • Proficiency in Microsoft Office
